I would sit down with costings, and speeds.
I think that I have seen, somewhere, that larger SSDs have slower transfer speeds, than smaller ones.
Maybe 1 External SSD for each Drive would be a better option.

I found the Samsung T7 shield 4TB with transfer speeds of up to 1,050 mb/s. However it's USB 3.2 gen 2. My motherboard supports up to USB 3.2 gen 1. I'm wondering how much the transfer speed will be affected. As for the cable, it can be inserted into any blue colored USB port on the motherboard shield, right? Do I need an adapter?

The only way to get the fasted speeds is use Type-C, so don't worry about it. You don't need an adapter they come with one for Type-C to Type-A and C to C.

It'll be faster than using an external HDD, but I think it'll be slow no matter what transferring files from my internal HDD to an external SSD, right? The internal HDD I'm hearing the noise from is the most concerning to me. It has 7200 RPM but 150 mb/s read and write speeds.
So I think I might as well go with the WD MyBook. I need the extra space as well.

You'll certainly by limited by the slowest read or write link in the chain, which is always a spinning drive (be it the source and/or destination), and usually even more-so when USB connected, especially sub-USB3 speeds.
